Welcome to the world of ORVED’s Sous Vide
System

Sous Vide in French for “under vacuum” is a method of
cooking that is intended to maintain the integrity of
ingredients by heating them for an extended period at
relatively low temperatures. Food is cooked for a long time,
sometimes well over 24 hours. Unlike cooking in a slow
cooker, sous-vide cooking uses airtight plastic bags placed
in hot water or combi oven well below boiling point (Usually
around 60 Celsius or 140 Celsius)
Sous Vide was development by George Pralus of Trois Gras in
the Mid 70’s by cooking this way he noticed that foie gras (gooseliver)
keeps its original appearance, did not lose certain amount
of fat and had better appearance. Paul Bocuse and Thomas
Keller are among modern fine chefs that are using this
method currently.

ORVED Vacuum Bags
Orved vacuum bags are certified by the “for foodstuffs” mark
impressed on each single bag, Orved’s bag are suitable for
the conservation of every kind of foodstuffs. Moreover,
cooking vacuum bags have been tested by the Food Science
Dept. Of Udine University. Orved is ISO 9001:2000 certified
for the production of vacuum bags too, which have been also
certified by the European Union (CE Certificated). A safe
vacuum process along with a wide production range that
fulfils all request and a constant engagement towards new
technologies, assure high quality standards that render
Orved at the top quality level in the production of vacuum
bags.
ORVED Smooth Vacuum Bags
Ideal for vacuuming with chamber machines, Orved smooth bags
are produced in two different thickness: 90 micron bags and
140 micron which are even more resistant and therefore ideal
for foodstuff with sharp edges, keeping always vacuum’s
quality since the bags don’t break.
ORVED Cooking Vacuum Bags
The great potential that derives from vacuum use applied to
cooking have driven Orved to produce bags that not only
conserve food but allow combined cook with a steam oven as
well. These bags can resist temperature at a maximum
temperature at 115 Celsius. They have been certified by the
Food Science Dept of Udine University.
ORVED Channelled Vacuum Bags
They make the air suction easier (with external suction,
chamber and family machines). The industrial process of bags
channelling is based on an innovative system that helps to
obtain a well-blended thickness by pressing homogenously on
the surface of the bag. These bags are also available in
channelled vacuum rolls. Thus, customizing the bags’ length
according to the customer’s demands is possible due to a
simple operation of cutting and welding. |

|
Vacuum packing machine, it is the flagship
of Orved production as far as the restaurant
industry and the vacuum cooking technique
are concerned. This chamber machine of last
generation is in fact equipped with all
possible options, such as the double dater,
which allows the printing of the date of the
packing and the number of lot on the border
of the bag, by simply placing the vacuum bag
between the pad and the stamp. The daters
are positioned between the vacuum chamber
wall and the sealing bar, thus leaving the
resistance free. Each dater can be easily
removed from its “sledge” position to
manually change the “date” or the “code”
which has to be printed on the borders of
the bags. |
